A flybar is a mechanical stabiliser. One generally uses a gyro with it to keep the tail/nose heading in the right direction, otherwise every sudden change in throttle would cause a tail wag due to the change in torque effect of the main blades as well as the change in rpm of the tail.

A flybarless heli uses an electronic stabiliser, which is basically three extra gyros all packaged into a box which is not much larger than the single gyro used with a flybar.

The advantages of flybarless over flybarred are less mechanical components to break, and the "feel" of the heli can be changed by altering parameters within the flybarless unit. Since all your controls go through the electronic unit (you tell it what you want, it decides how to achieve it), more recent ones can have bells and whistles like a panic button, where you flick a switch if you get into trouble and it will right itself and go into a stable hover, or even gps control so it can hover by itself over a fixed spot.
