My only truly flat surface for building a wing is my kitchen work top, which isn't practical. So I'm limited to building EPP only or buying ready built second hand models. I have a portable building board and it is very easy to slip out of the way while your not using it. Just get the main building of the wings done asap so you dont get sick of seeing it lying around. My one is an MDF sheet about 600mm x 1200mm. Just slip it under the bed when its not in use .......If your worried about the board twisting just buy a steel 1m rule to check it for twisting.
