confusion for newbie

Hi Dave and welcome to the forum.

kV is the RPM of the motor per volt with no load. There are lots of threads on electric power with many confused posters - specifying a power train is a matter of getting quite a few components matched and there are computer programs (such as Motocalc) available to aid in the task!

It's an important consideration as it relates to the size of propeller that can be used efficiently - and without overloading the motor.

Do you mean C ratings?  These are a measure of how fast you can discharge.  C is the current that will discharge the battery in an hour, so a 20C battery can be used in 3 minutes!  It relates to the internal resistance and quality of the cells but beware that manufacturers have been known to exaggerate!

S is simply the number of cells in series. A 3S LiPo battery is nominally 11.1v

You might like to start here but don't be afraid to ask questions.
